Upon learning on leapday that I am now numbered among those with diabetes, I have found that the properties of the things I eat are now changed. For the most part, those left overs in the fridge are 'verboten'! Such tasty things too, now that they are on the no no list.
My take on the new life style is this: there are many things worse. The old french song "que cera, cera...what ever will be will be...the futures not ours to see...." is now a reality.
As a way of taking some of the work out of what I am going to eat, I have been cooking and packaging the left overs into my new diabetic portions.
So far I have cooked wild rice in 1/3 cup portions, 1/4 cup portions of tomato sauce, and 1/2 cup servings of cooked oatmeal. Should I need a quick meal and not feel up to waiting for everything to cook for a hot meal, all I need do is add ingredients to these items I already have prepared.
An example was todays lunch. I made a soup of 1/4 cup tomato sauce, 1 1/4 cups of water, 1/3 cup wild rice, 1 beef bouillion cube, and hot chili powder for seasoning. It made 2 cups of delicious hot soup for my lunch.
Now, I need to add to my little portion section of my freezer. I can see it will be a well used and treasured area critical to correct eating as well as a fast hot meal. I have frozen cooked meats that from now on I will put into smaller units so they too can be quickly and efficiently thawed for a good hot meal.
