You'll need:
- 2 c. water
- 1 c. long-grain rice
- 3/4 c. shredded cheddar cheese or
Monterey Jack cheese
- 1/2 c. sour cream
Bring the water to a boil over high heat
in a 1 1/2 qt. saucepan with the help of an adult. Stir in the rice.
Reduce heat to low. Cover and cook for about 20 minutes, or until most
of the water is absorbed. Ask for help when checking the rice. Be sure
to use oven mitts when taking the cover off the pot as the steam is very
hot. Add the cheese and sour cream to the rice. Stir well until it is
completely blended. Cover, and let stand for 1 minute so the cheese
melts completely. |
