You'll need:
- 1 whole pineapple ring (canned or
fresh)
- 1 honey wheat English muffin
- 2 T. low-fat cottage cheese or low-fat
cream cheese
- 1/4 tsp. ground cinnamon
- 1/4 tsp. sugar
Open the can of pineapple rings if you
don’t have fresh pineapple. Use a fork to take out one of the rings
and place it on a folded paper towel to drain. Split the English muffin
gently in half, and toast lightly. Carefully remove with an oven mitt.
Spread the cottage cheese or cream cheese on one half of the muffin.
Place the pineapple ring on top. Sprinkle the cinnamon and sugar evenly
over the pineapple. Place the other half of the muffin on top. Cut the
sandwich in half to eat. |
