|1 Finnan haddock
1 c. milk
2 tbs. flour
4 tbs. cheese
salt and pepper
1.Clean fish, simmer in salted water for 7 minutes.
2.Remove fish, skin and flake flesh.
3.Place tomatoes in boiling water till skin loosens, remove, skin.
4.Place with fish in ovenproof fish.
5.Blend flour with a little milk, add in rest of milk.
6.Bring to a boil, stirring to keep mixture smooth, 3 minutes.
7.Grate cheese, beat eggs, add to sauce.
8.Heat until sauce thickens, don't boil.
9.Pour over fish and tomatoes.
