Blue Crab
Stuffing |
1 pound flaked blue crab meat
2 slices bacon
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped bell pepper
1 clove minced garlic
2 cups crushed cracker crumbs
1 teaspoon dry mustard
1/2 teaspoon salt
2 Tablespoon chopped parsley
Dash cayenne pepper
1 beaten egg
1/4 cup milk
1/2 cup melted margarine
1 teaspoon Worcestershire sauce
Remove remaining shell and cartilage from crab meat. Cook bacon until
crisp; crumble and set aside. Sauté vegetables in bacon grease. In
large mixing bowl, combine cracker crumbs and dry ingredients. Add all
other ingredients and mix thoroughly. Stuff mixture into shells of
casserole dish and bake at 350 degree for 30 minutes. In the microwave
oven, bake on HIGH for 15 minutes turning the dish once. Makes enough
for 6 crab shells. |
