You'll need:
- 1 lg. clove garlic
- 1 (13 3/4 oz.) can chicken broth
- 2 T. olive oil
- 1 (16 oz.) pkg. dried cappellini pasta
- 1 c. grated Parmesan cheese
- 1/2 c. fresh basil leaves or parsley
leaves
Peel the garlic, and cut into 4 pieces.
Open the can of chicken broth and put into a medium microwaveable bowl
with the garlic. Cover the bowl with plastic wrap. Microwave on HIGH for
3 minutes. Remove the bowl from the microwave using the oven mitts.
Carefully remove the plastic wrap. Add the olive oil to the broth, and
set aside. Fill a 6-qt. pot with about 4 cans of water and bring to a
boil over high heat. An adult should supervise this. Add the pasta
carefully and stir. Cook the pasta for 10-12 minutes until tender. Drain
the pasta over the sink using a colander then return the pasta to the
pot. Remove the garlic pieces from the broth mixture using a slotted
spoon. Carefully pour the broth mixture and half of the Parmesan cheese
over the pasta in the pot. Stir well. Serve with the remaining Parmesan
cheese sprinkled on top. You can also place a few fresh basil leaves or
parsley sprigs over each dish to make it look pretty. |
