Ingredients : |
|
2 large smoked haddock fillets
1 chopped onion
1 chopped leek
1 bay leaf
1 pint of milk
800g/ 2lb mashed potato
½ pint/ 275ml cream
flat leaf parsley (chopped)
salt & pepper |

| How to Prepare : |
|
Place the haddock, onion, leek and bay leaf in a heavy based pan and cover with the milk.
Bring to the boil and cook for 25 mins until the veg is soft and haddock breaks easily into pieces. Season.
Add the mashed potato and cream.
Mix thoroughly and serve garnished with the parsley. Serve immediately.
