2 Arbroath Smokies (or other naturally smoked fish)
100g/4oz arborio rice
salt
pepper
1-2/500ml-1litre pints hot vegetable stock
the green part of a leek, finely chopped
splash of white wine
1 tbs butter or olive oil
juice of half a lemon (optional)
1 fillet Smoked Finnan Haddock 1 poached egg
For the potato champ:
2 medium sized potatoes, boiled and mashed
butter or cream to add to the mash
2 finely sliced spring onions
white pepper and salt to taste
For the Mornay sauce:
500 ml/ 1 pint single cream
1 tablespoon parmesan cheese
1 tablespoon mature cheddar...
500g/ 1lb beef mince2 medium sized onions (diced)2 large carrots (diced)5g/ ¼oz fresh rosemary and thyme400g/12 oz mashed potatoeshandful peassplash single cream400ml/ ¾ pint gravysalt and peppertablespoon olive oil
1 part oats2 parts liquid (half milk half water or full cream if you desire)1/2 tsp bicarbonate of sodaa pinch of salt is good when cooking, even if you do take sugar with it your choice of topping or other flavour
