Sauerkraut Potato Salad


6 to 8 potatoes, boiled
1/2 jar sauerkraut
1 large kosher style pickle
1/4 cup olive oil (according to how much you like olive oil)
Low fat salad dressing about 1/2 cup (I use low fat Miracle Whip)
3 or 4 cloves garlic
onion powder (shaker bottle)
Salt as you like (I always use natural sea salt.)
2 or 3 Tablespoons apple cider vinegar

Boil potatoes then cool under water.  Slip the skins from these and cut up in small pieces. Mince the sauerkraut in very small pieces so it is not long and stringy. Mince the kosher pickle. Mash the garlic with the flat of a knife and then mince it very small, also. Add the olive oil along with the salad dressing. If the potatoes are dry add a little more salad dressing. Shake a dash of onion powder over, add the vinegar and blend all together,  well.
