Flour joints and brown lightly in butter. Place a layer of
potatoes and onions in the base of a casserole; season and place some chicken joints on
top. Continue in layers finishing with a layer of potato; add stock. Cover and bake for
two to two and a half hours at 350F or gas mark 4. Remove lid towards the end of the
cooking time; brush potatoes with butter and brown on top. Serve with poached eggs.
