Herb Salmon


2 tbls. margarine or butter
1 tbls. fresh or dried mint chopped
1 tbls. fresh or dried chives chopped
1 tbls. fresh or dried parsley chopped
Salt and pepper to taste
Juice of one lemon (about 2 - 3 tbls.)

This works best if salmon is wrapped loosely in aluminum foil to form a tent. It can be grilled or baked at 350o. All the ingredients should be brought to a slow boil in a saucepan and then served on the side with the salmon to be spooned on when served. It also has a wonderful taste if the herbs are fresh rather than dried but either is good!
