Free Kirk Pudding

5 tablespoons flour
3 tablespoons of white bread crumbs
2 oz (60g) butter
2 tablespoons of sugar
1 egg
1 teaspoon of spice
3 tablespoons of raisins
3 tablspoons of currants
1 teaspoon of bicarbonate of soda


1) Sift the flour into a bowl, add in the breadcrumbs
2) Rub in the butter, add the sugar, spice, raisins and currants, mix
3) Dissolve soda in a little milk, add beaten egg, add to ingredients to create a fairly slack dough, add in some more milk if necessary
4) Turn into a greased mould, cover with greased paper and steam for 3 hours.
