Cherry-Chocolate Chip Cookies


We just finished baking some chocolate M&M cookies then we did the following cherry-chocolate chip cookies.  They are really good too! :-)  Lauren holds the mixer and stirs also, I measure and she pours the ingredients in the bowl.  She thinks she has really done something! :-)  Off to the park now!

You'll need:

  • 1 c. chopped maraschino cherries, well drained
  • 3/4 c. (1 1/2 sticks) butter, softened
  • 1/2 c. granulated sugar
  • 1/2 c. brown sugar
  • 1 tsp. vanilla
  • 1 egg
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 c. miniature semi-sweet chocolate chips
  • 1/2 c. chopped pecans

Heat oven to 350 degrees.  Put chopped cherries on paper towel, and pat dry.  Stir butter, sugars, vanilla and egg in large bowl until mixed.  Stir in flour and baking soda.  Stir in cherries, chocolate chips, and nuts.  Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie
sheet.  Bake 12-15 minutes or until light brown.  Cool 1 minute before taking cookies off cookie sheet. Makes about 2 dozen cookies.
