1/2 cup cooked beets
1/2 cup cooked kidney beans
1/2 cup cooked black-eyed peas
1/2 cup whole cooked kernel corn
1 onion
1/3 dried California Anaheim pepper
1 red Bell pepper
!/2 cup water
1/2 cup Paul Newman low fat Italian Salad dressing
2 ice cubes
Mince 1/2 cup beets. Leave beans, corn and peas whole. Mince onion, Mince
Red Bell pepper.
Boil dried pepper in 1/2 cup water for ten minutes. Put in blender and add
2 ice cubes. Blend until the 1/3 of a pepper is liquid.
Mix ingredients together along with 1/2 Cup Paul Newman dressing and the
Anaheim pepper.
Put in a covered dish and let stand over night.
Print recipe off when you serve it because someone will always ask for it
when you serve it to a crowd. Beans and corn together make a complete
protein and can replace meat. |
